Mindanao now has a Halal-certified academe-based Culinary Lab Kitchen as the Institute of International Culinary and Hospitality Entrepreneurship (IChef) received Monday, September 26 Halal certification and Hazard Analysis and Critical Control Point (HACCP) Certification from Dubai-based Halal certifying body Prime Group of Companies.

Prime CEO and owner Mary Jane Alvero personally awarded the certification to Joji Ilagan International Schools chairperson Joji Ilagan-Bian. Prime Certification and Inspection is a subsidiary of the United Arab Emirates-based Prime Group of Companies, is the first and only Philippine-based halal certification body, recognized by the Saudi Food and Drug Authority (SFDA) and the only Philippine halal-certifying body authorized to give certification for food exports bound for the Kingdom of Saudi Arabia.

With these certifications, IChef can educate and equip its students with proper information, implementation, and awareness about Halal.

Nicole Niña Hao Bian-Ledesma, chief operating officer and vice president for Academic Affairs of the Institute of Joji Ilagan International Schools, said this will strengthen the bid of Davao City to be the Halal capital of the Philippines.

“Through this program, we will be able to capacitate our students. Training starts with school so when they go out to the industry they‘ll be the ones to professionalize or to make the industry aware of what really is Halal. Halal is not just “no-pork” policy, it’s not just for the Muslims, it’s a way of life,” she said.

IChef has an average of 200 students enrolled in culinary courses per semester.

According to Future Market Insights, the global halal market is now estimated to be worth over $2.3 trillion while the global halal tourism market holds a forecasted revenue of US$ 255.0 billion in 2022.

After a hiatus and limited face-to-face and laboratories due to the CoVid19 Pandemic, the institute of international culinary and hospitality entrepreneurship will hold full face-to-face classes for their second term. As the Covid19 cases are decreasing and the city’s immunity is high, ICHEF is ready to start it again with a bang! Various exciting activities and endeavors await and are in store for the students. Events like Global Skills, Cuisine de Marche, restaurant operations, and to name a few, are among the co-curricular activities they can to look forward to.

In celebration of World Tourism Day, the Joji Ilagan International Schools hosted A Round-Table Discussion with the selected and academically competent students sharing a topic about Rethinking Tourism: Gearing Towards Sustainability for a Greener, Safer, and Healthier Industry.

This event was graced by our Guest Speaker, the Owner of Green Heart Tourism – Ms. Emilie Hagedoorn, in partnership with Go Negosyo and PUM Netherlands Senior Experts and Ms. Mary Ann Baby Montemayor Go Negosyo Tourism Cluster Coordinator and CEO, Villa Margarita Group of Companies, and Mr. Dante “Toto” Muyco, Mindanao Representative and PUM (Netherlands Senior Experts). 

After the intellectual discussion, the guests were delighted and enjoyed the sumptuous three-course meal our fourth-year culinary students prepared. For the appetizer, the students prepared salmon and cream cheese wrap with thin cucumbers served with melba toast and creamy dill sauce. The main course was an explosion of rich flavors of vol au vent of chicken with asparagus, mushrooms, and Parisienne potatoes. And finally, the dessert was an odyssey to the tropical taste of spiced fruit soup served with strawberry gelato.

It was indeed a fruitful and insightful morning and a mouthwatering luncheon.

Our student and in-house culinary chefs tediously prepared mouthwatering halal dishes for the guests as ICHEF Halal Kitchen was officially awarded the Halal and HACCP Certifications by the Prime Group, formerly known as the Geosciences Testing Laboratory, a leading multi-research laboratory. The ceremony was attended by CEO Dr. Mary Jane Alvero-Al Mahdi, consuls, esteemed guests, industry partners, and media. 

To celebrate this milestone, our student chefs prepared four-course meals. As a starter, they have prepared Amouse Gille – focaccia bread with olive oil and balsamic vinaigrette. A Marinated Feta and Deep Fried Brie de Mieux with Honey Roasted Walnuts, Baby Field Greens, and Raspberry Vinaigrette were prepared to stimulate their appetite. And for the gastronomic apex, the student chefs served a Pan-seared Salmon Escalope with Lime Mousseline Sauce and Gratinated Chicken Breast with Herbs de Provence, Pomme Almondine. Ending the meal with a decadent Trio of Sticky Rice Balls, Dragon Fruit, Pandan and Mango served with Lime Chantilly Cream in Coconut Caramel Sauce. 

As an international school, we do more than train our students with genuine international skills. At the same time, we remain committed to providing relevant and inclusive education and aim to contribute further to Davao City’s robust economy and tourism.

The Regional Halal Committee XI formally welcomed the Institute of International Culinary and Hospitality Entrepreneurship (ICHEF) as their new member last November 17, 2022, during the Quarter Regular Meeting held at the World Palace Hotel, Davao.

Together with various committee members, the meeting was represented by the Culinary Program Head and Halal Team Assistant Leader, Mr. Raul B. Hermosisima, Jr., MBA, CET, and the Halal Team Internal Auditor, Ms. Norhayah Macabato, MBA. Mr. Raul proudly presented the institution’s updates, initiatives, and plans to enrich Halal from the perspective of the academe.

Indeed, it was a fruitful meeting in continuing the thrust of making Davao City a top Halal Tourism Destination.

The blissful culmination of the month-long celebration and appreciation of the teachers of the Institute of International Culinary and Hospitality Entrepreneurship (ICHEF), THE International Management School, and the Joji Ilagan College of Business and Tourism. The ICHEF & JIB student leaders prepared various activities for their teachers who have been resilient and dedicated to providing the best education and continuously shaping their minds in upholding the core values: Passion, Respect, Integrity, and Excellence or PRIDE!

Before the culmination, the teachers could enjoy activities such as Larong Pinoy, Movie Marathon, and Student Swap and pamper themselves for a whole week. Last October 27, 2022, the event formally ended through an appreciation culmination celebration. The culmination began with a parade of teachers and self-introduction–cheered loudly by the students. After this, a speech from the Chief Operating Officer, Ms. Nicole Niña Hao Bian Ledesma, inspired and uplifted the spirit of everyone. The Chairperson, Madame Joji Ilagan Bian, also gave a warm inspirational message to the teachers and students virtually. Fun games such as paper dance, on-the-spot quiz bee, and many others spectacularly painted laughter and joy to everyone. The students ended it by giving their beloved teachers flowers and tokens of appreciation.
